Ambadi ki Sabzi | Gongura Sabzi | Sour Leaves curry :
Ambadi ki Sabzi is a Maharashtrian green leafy vegetables popular in a day to day meal having healthy benefits. Its a little sour in a taste.
Ambadi is a plant, either Kenaf (Hibiscus cannabinus) or Roselle (Hibiscus sabdariffa), grown for its edible leaves in India.
Ambadi comes in two varieties, green stemmed leaf and red stemmed. The red stemmed variety (also Called as Laal Math) is more sour than the green stemmed variety. (Source: Wikipedia)
It is popular vegetable in India because of its health benefits, having lot of carbohydrates, fiber and protein also vitamin B1 (thiamin), vitamin B2 (riboflavin), vitamin B9 (folic acid) and vitamin C, iron and anti-oxidants essential for our body.
Ingredients for Ambadi ki Sabzi
Main Ingredients 1 Bundle Ambadi Sabzi 1 tbsp Split Yellow gram (Harbhara Dal), 1 tbsp roasted peanuts, 1 tbsp Rice JaggeryIngredients for Tadka Red Spices, 15 Garlic pieces Salt, mustard, turmeric and hing Oil 500 ml Water
How to make Ambadi ki Sabzi
Preparation for Ambadi ki sabzi1Wash Ambadi sabzi and chop it.
Cooking2Take chopped ambadi in a cooker and add Peanut, Split yellow gram (Harbhara Dal), Rice and salt. Pour 500 ml water in it. Cover it with cooker lid and get 1 whistle.
3After getting cooker cool. Strain all the water from Ambadi bhaji by pressing it by hand. It will rduce sourness of Ambadi
Making Tadka4In a frying pan, heat oil and add mustard in it. Once mustard splutter add garlic. And saute it till garlic become golden.
5Then sprinkle turmeric, hing and red spices as per your taste. Saute it again.
Making Ambadi ki sabzi6Now, add jaggery and salt and mix it well.
7Then cover it with a lid for 1 to 2 minutes.
8Remove lid after 1 to 2 minutes and saute it again for a while.
9Our delicious Ambadi ki sabzi is ready! Serve hot with Bhakri or chapati.
