Chhole or chickpeas is a very popular Punjabi dish. There are also many other different varieties in Chhole recipes like

  • Chhole Bhature,

  • Chhole chana masala,

  • Chhole masala.

In all these recipes Chhole is cooked well so it's soft while eating, whereas in Crunchy Chhole Chilly fry, as name suggests, it is very crunchy and crispy.

So, this is my personal favorite crunchy Chhole recipe.

This recipe basically split in two parts. Making crunchy Chhole and making tadka.

In first step we have to keep soaking Chhole in water for a whole night. The specially added corn flour while making crunchy Chhole takes this recipe to whole new level. Then we have to fry it. You can actually feel the noise of Chhole after frying.

 

Second step goes for making yummy tadka for Crunchy Chhole. Addition of Red Chilly sauce, black pepper powder, dark soya sauce and ketchup creates catchy look of the recipe while adding delicious taste in it.

Ingredients for Crunchy chhole recipe


Crispy Chickpeas (Chhole Recipe)
 ½ cup Chickpeas (Chhole),
  cup Corn flour
 Oil for frying
Sauce
 ½ chopped capsicum
 1 chopped small onion
 2 chopped green chillies
 20 beaten garlics
 ½ tbsp dark soya sauce
 1 tbsp ketchup
 ½ tbsp red chilly sauce
 black pepper powder, sugar, salt, vinegar, oil

How to make Crunchy chhole recipe


Readiness of Chickpeas (Chhole)
  1. Keep soaking Chickpeas (Chhole) for whole night. Then add some salt in it. Then keep in cooker for FOUR whistles. Then keep cooker on low flame for nex 5-6 minutes. And then keep it for getting cool. Chickpeas (Chhole) should cook well from inside.
  2. Take all Chickpeas (Chhole) in one bowl. And add 1 tbsp corn flour in it. Mix it by stirring bowl up and down. Now check Chickpeas (Chhole) whether it has good coating of corn flour or not. Add more corn flour if necessary. We have added total 3 tbsp of corn flour.
Frying Chickpeas (Chhole)
  1. Take some oil in one frying bowl and let it become hot enough. Keep the flame on high.
    Pour Chickpeas (Chhole) in hot oil. Do loose the Chickpeas (Chhole) which sticked together.
  2. Fry it for 5-10 minutes. Feel the crispy sound of Chickpeas (Chhole). Tip: Don’t fry Chickpeas (Chhole) on low flame otherwise Chickpeas (Chhole) will get dry inside.
Making Sauce
  1. Take a small amount of oil in a Pan. And make it hot.
  2. Add chopped green chillies, chopped onion, chopped capsicum, beaten garlic. And mix it well.
  3. Then add Red Chilli sauce, dark soya sauce and ketchup. Mix it well.
  4. Add Sugar, vinegar, Black pepper powder and salt as per taste. Let it cook for 5 minutes. Feel thickness of the sauce.
  5. Now, Add ½ cup of water and mix it well. And boil it for 5-6 minutes.
  6. Then, Add some water in small amount of corn flour in a small bowl.
  7. Add some of this corn flour liquid in our sauce and mix it well. Due to adding of corn flour liquid our sauce gets some texture and glazing.

  1. After that, Add our crispy Chickpeas (Chhole) in ready sauce.
  2. Mix it well and off the Gas.
