Colocasia Leaves recipe is a healthy and popular Maharashtrian green leaf vegetable recipe. It is also called Aluchi patal bhaji or Aluche fatfate in Marathi.

Please don't confuse Alu with Aloo. Alu is a marathi word for Colocasia whereas Aloo is a Hindi word for Potatoes.

Colocasia Leaves are herbaceous perennial plants with a large corm on or just below the ground surface. The leaves are large to very large, 20–150 cm (7.9–59.1 in) long, with a sagittate shape. The elephant's-ear plant gets its name from the leaves, which are shaped like a large ear or shield.

I have used water extract of tamarind and jaggery which increases richness of taste of Aluche fatfate. To make this first keep 2-3 tamarind with some jaggery in a small bowl for soaking in a water for 30 minutes. Then mash it in a water and remove residue. Add little salt and our extract is ready.
