I have used cashew paste here. To make this

  • boil cashews in water. Drain all water.
  • Rinse cashews with normal water.

Tips for Dum Aloo recipe


  • I have not deep fried potatoes, you can fry if you like. But make sure potatoes should not over cooked.

  • You can use almonds instead of cashews for paste.

  • If baby potatoes not available then you can use normal potatoes as well.

  • While cooking potatoes with gravy, you can use foil paper or dough to close opening of pan.

Ingredients for Dum Aloo recipe


 9 baby potatoes (boiled and skin removed)
 3 medium sized sliced onions
 2 medium sized sliced tomatoes
 ½ cup curd
 10 paste of 10 cashews
Spices for Dum aloo biryani
 Khada masala (8 cloves, 8 black pepper, 3-4 pieces of cinnamon, 1 black cardamom, stone flower/dagadful)
 10 garlic pieces
 1.50 1.5 inch ginger (chopped and skinned)
 ½ tbsp coriander seeds powder (dhania powder)
 ½ tbsp shahjire (caraway seeds)
 ½ tbsp cumin
 ½ tbsp garam masala
 ½ tbsp kasuri methi
 Red spices, salt, turmeric, hing, sugar
 chopped coriander

How to make Dum Aloo recipe


preparation of potatoes
  1. Take the boiled potatoes and prick it with a fork or toothpick.
  2. In a small mixing bowl, add 2 tbsp curd, garam masala, dhania powder, turmeric, red spices and salt. Then mix all contents.
  3. Pour this mixture on boiled potatoes. And mix all mixture with potaoes.
  4. Now, heat some oil in a frying pan. And saute our potatoes in a oil for 5 to 10 minutes, on low flame. You can deep fry if you like. You can do other activities of recipe till potatoes get ready. Rotate potatoes in between so that they will saute well from all side and will not burn.
Making Khada Masala
  1. Add all contents of Khada masala (8 cloves, 8 black pepper, 3-4 pieces of cinnamon, 1 black cardamom, stone flower/dagadful) in a mixer jar.
  2. Add all shahjire in mixer jar.
  3. blend it fine and keep a side.
  4. Blend garlic and ginger in a mixer grinder.
  5. Pour sliced onion in mixer jar.
  6. Blend it in a mixer grinder to make paste. Add water if required. Keep paste in a bowl. Rinse mixer jar with 1/2 cup good water and keep aside.
  7. Add sliced tomatoes in mixer jar.
  8. Blend it in a mixer grinder to make paste. Add water if required. Keep paste in a bowl. Rinse mixer jar with 1/2 cup good water and keep aside.
Making gravy for dum aloo recipe

  3. Now add hing and garlic-ginger paste and again stirr it well for a minute.
  4. Pour tomato paste in a mixture and mix it well for two minutes.
  5. Then pour cashew paste in our gravy and mix it thoroughly.
  6. Sprinkle dhania powder, garam masala and khada masala. Mix it well for 2 to 3 minute.
  7. Add remaining curd and little sugar. Mix it again.
  8. Crush kasuri methi on palms of our hand and sprinkle on gravy and mix it well.
  9. Pour around 1 cup water in gravy. Don't make gravy too thin or too thick. This is the same water we have kept aside while making paste of onion and tomatoes.
  10. On high flame, sprinkle salt for taste and coriander.
