Eggplant curry is popular recipe in Indian home for daily meal. It is also main food in wedding ceremony. It is very easy recipe and step by step photos will make your efforts easy.

TIPS

  • After chopping eggplants, put it in water, so it will not become black.

  • If slices of eggplants are thick in size then it may take more time to cook or need some water in it.

 

Eggplant Curry main ingredients
 3 Sliced eggplants
 2 Chopped medium size onion
 ¼ tbsp grinded roasted peanut
Other ingredients
 Salt, spices (mixture red spices and goda masala)
 Turmeric, hing, mustard and cumin
 Oil

 
Preparation

In a hot oil, add mustard then cumin. Add hing and turmeric. Mix it well.

Add chopped onion and saute for 2-3 minutes.

Then add sliced eggplants with salt, mixture of red spices and goda masala. Mix it thoroughly.

Keep lid on pan for 10 min to cook eggplant.
