During festivals, marriages, events and get-together, the most famous recipe is Kurma Puri.

Kurma puri is typical and traditional south Indian recipe.  

 

I am great fan of south Indian recipes. In this my blog you can find a seperate page for South Indian recipes. It has lot of popular recipes like IDLI, SAMBAR, DOSA, UTTAPAM, MEDU VADA with huge varieties in it. 

 

Kurma in kurma puri recipe is typically made up with vegetables like cauliflower, green peas, potatoes, tomatoes, etc. When these veggies cooked in pressure cooker and gives tadka with spices, it give delicious taste.

 

Here I am sharing my personal favourite recipe of traditional kurma puri.

Ingredients for Kurma Puri recipe


Ingredients for Puri
 300 g Wheat Flour
Ingredients for Kurma
 2 chopped big onion
 150 g Flower
 100 g Green peace
 3 Chopped medium sized potatoes (Remove skin)
 2 chopped small tomatoes
 100 g grinded wet coconut with added water
 1 boiled small potato
Ingredients for Tadka
 Garlic (15-20) + Ginger (1/2 inch) + chiilies (2-3) Paste
 1 ½ tbsp Sooji
 1 tbsp Kitchen King / Puri Bhaji / Chhole Masala
 Turmeric, mustard seeds, cumins seeds,
 Curry Leaves, Salt, chopped corinder
 3 tbsp Oil

How to make Kurma Puri recipe


Preparation for Puri
  1. Take wheat flour in a mixing bowl.
  2. Add Sooji, 1 tbsp Oil and salt as per taste.
  3. Now add some water it and start to squeeze wheat flour.
    Squeeze it until turns out thick dough. Add water whenever required. Keep dough covered for 15 min
Making Tadka
  1. Take 2 tbsp oil in a cooker or frying pan. Add mustard seeds. Once it spluttered add cumins seeds and onion. Mix it well til onion gets golden in color.
  2. Now add Garlic+Ginger+Chilies paste and salt. And mix it well.
  3. Then add tomato in our mixture. And again mix it well for 5-7 min. Now cover it with lid for around 2 minutes.
  4. Now, add hing, turmeric, grinded coconut and mix it well for around 10 min.
  5. Then add Kitchen King / Puri Bhaji / Chhole Masala, spices as per taste and salt and again mix it. Now add boiled potato and smash it using smasher. Then mix it well.
  6. Till the time, lets start to make Kurma for Kurma puri.

Making Kurma for Kurma Puri

  1. Now add cauliflower, Potato and Green Peace and mix it well. Then cover it with lid and keep it for steaming for 2 minutes
  2. Add around 400 ml water and mix it.
  3. Now add Salt for taste and coriander and mix it. Then high flame let it boil. After starting boiling place cooker lid and get 3 whistles.
  4. After 3 whistles of cooker. Let it cool down and then remove lid of it. Feel the delicious smell of Kurma.
Making Puri
  1. Pour some oil in deep frying Pan and let it become hot.
  2. Add some oil in our dough and again mix it
  3. Cut small portion of dough and make it shape of ball. Then press it slightly.
  4. Roll the dough ball evenly to all sides. Revolve it while rolling it.
  5. Press the roll by bowl for perfect circle of roll and remove extra dough. You can also make big roll (Size of chapati) and then cut by bowl in puris
  6. Put puri in a Hot oil and fry in by pressing gently on it. Move puri in cicular motion, so that puri will puff well. Now turn it down and fry it till get golden brownish color
  7. Enjoy the delicious Kurma with crispy Puri!!

How to make Kurma Puri recipe

Now, add hing, turmeric, grinded coconut and mix it well for around 10 min.

Making Puri

Roll the dough ball evenly to all sides. Revolve it while rolling it.

Press the roll by bowl for perfect circle of roll and remove extra dough.
You can also make big roll (Size of chapati) and then cut by bowl in puries.
