Pav Bhaji recipe one of the most popular street food originated from Mumbai, India. Here, I will illustrates easy method of recipe with step by step photos.

 

Pav bhaji makes with different vegetables mashed with butter and spices. This tastes delicious and favorable.

What is Pav Bhaji

It is a typically bhaji served with Pav. Bhaji is a marathi word for Vegetable gravy made up with mashed vegetables and Pav is a Indian bread, which is served with slighly roasted off the pan. It is served along with chopped onion, sliced cucumber and piece of lime.

 

Pav bhaji is basically from Mumbai and now popular street food across India. Though it is originated at the streets of Mumbai, now a days it is much popular in hotels and restaurants. 

 

The dish was made to serve the requirement of dinner of a textile mill workers. Textile mills got huge orders from USA, so workers has to work all along the night. So, to fulfill their requirement of cheap, easy and quick food pav bhaji born. They mixed all the vegetables available at the place and added some spices!

The taste you get at home is different than Pav bhaji made at streets stalls, they typically uses more potatoes and tomatoes. They avoid cauliflower due to more expensive. They also add masoor dal in it. If you like you can too add it along with veggies. The addition of red color makes them more orangish and reddish.

 

A special mixture of spices called Pav Bhaji Masala is used. It is easily available in any general or grocery stores. You can make recipe with any of your favorite brand.

Ingredients for Pav Bhaji


Vegetables
 6 peeled and Sliced potatoes
 1 sliced tomato
 ½ cup green peas
 2 Sliced onion
 ½ cauliflower
 1 sliced capsicum
Spices
 Garlic-ginger paste, turmeric, mustard
 1 tbsp Red spices
 1 tbsp Pav Bhaji Masala
Other ingredients
 chopped coriander
 butter
 Oil and water

 

How to make Pav Bhaji


Cooking of Vegetable
  1. mix potatoes, green peas, cauliflower and capsicum in a cooker along with water and get 5 whistles of it. Make sure all veggies cooked completely. After boiling veggies, let the cooker get cool by its own. Remove all veggies in a mixing bowl. Keep remained water aside.
  2. mash all boiled vegetables fine with masher.
Making onion and tomato paste
  1. Pour sliced onion in mixer jar.
  2. Blend it in a mixer grinder to make paste. Add water if required. Keep paste in a bowl.
  3. Add sliced tomatoes in mixer jar.
  4. Blend it in a mixer grinder to make paste. Add water if required. Keep paste in a bowl.

Making gravy 
  1. Heat 1 tbsp oil in a deep frying pan. Add mustard, once it get scattered, add ginger-garlic paste. And saute it for a while.
    You can use butter instead of oil.
  2. add onion paste and mix it with fried spices.
  3. also add tomato paste and mix with onion paste for 5-6 minutes.
  4. mix it with little turmeric
  5. add pav bhaji masala and mix it thoroughly.
Making Pav Bhaji
  1. pour and mix mashed veggies along with our gravy
  2. under low flame, cover it with lid for 5 minutes to cook under steam.
  3. remove the cover after 5 minutes. All veggies now cooked well.
  4. Sprinkle red spices as per your liking and mix well in pav bhaji.
  5. Add some water in pav bhaji. This is same water which we have kept aside after boiling veggies in cooker. Water can be added as you like to have consistency of pav bhaji. Keep in mind that, the more time you keep pav bhaji, more it will become thick, because veggies will absorb water. You can add water later if you want it more thin.
  6. mix pav bhaji with salt as per taste.
  7. now, sprinkle some chopped coriander. and mix it.
  8. add pieces of butter on it.
  9. cover it with lid for 2 minutes.
  10. remove the cover. Butter is now melted in pav bhaji.
  11. Delicious pav bhaji is ready
Roasting Pav 
  1. Split pav in between with knife 
  2. Heat pan and spread some butter on it.
  3. You can also add little pav bhaji over butter if you like.
  4. Place pav on melted butter.
  5. roast pav from one side then turn down and roast from other side too.
  6. Add butter if required.
  7. The more time you roast pav the more it will become hard.
Serving Pav bhaji
  1. Take bhaji in a plate or bowl.
  2. place sliced cucumber, sliced or chopped onion and lemon pieces in another bowl.
  3. add some butter on bhaji
  4. take roasted pav in separate plate.
