Sabudana Kurdai is basically maharashtrian recipe and it is made during summer only, because it needs bright sunshine. It is also called as Summer work special recipe.

 

Sabudana kurdai recipe made up with sabudana without cooking and with minimum ingredients. It is very easy and anybody can do it. 

 

The preparation for making Sabudana Papad and Sabudana Kurdai is same.

 

There are also other items which made during summer only and they are preserved for a year.

Ingredients for Sabudana Kurdai recipe
 ½ cup sabudana
 Salt and water

 
Preparation

Wash Sabudana for twice or thrice. And then add exactly the same water by which tool you have measured sabudana.
Here I have taken 1/2 cup sabudana, So I have used 1/2 cup water. Keep it soaking for 8 hours or whole night with cover on it.

After keeping sabudana for 8 hours, check sabudana cooked or not by pressing it with our fingers.

In a deep pan or cooker, add double water with the same measurement tool. As I have used 1/2 cup measurement I have taken double 1/2 cup water.

Now, boil this water and switch off gas. Pour sabudana in it and mix it well. Cover cooker or deep pan with tight lid and keep it for 10-12 hours.

Our sabudana became very soft.

Take a mixing bowl and put a sieve on it. Pour all sabudana in a sieve. Grate by pressing sabudana on a sieve.

Now remove all the grated sabudana sticked below sieve. Add Salt in it and mix it well.

Use Sorya similar to what I have used. It is very handy and effortless.

Apply oil inside container of sorya, so that batter will not stick inside.

Fill in container with Sabudana Batter.

Now, make Sabudana Kurdai pressing handle of Sorya and moving in circular motion at the same time.

Keep all Kurdai in bright sunshine for 2 days. Once they dried on one side then turn over and let it dry again. Once they dried well under sunshine you can also dry it under fan.

After keeping under bright sunshine for 2 days and sometimes under fan our Sabudana Kurdai dried well. We have made around 15-20 Kurdai from 1/2 cup sabudana.
