Sambar recipe is a popular dal soup which is mixture of lentils and different vegetables. Sambar completes lot of South Indian dishes like Idli, Medu vada, Dosa, Uttapam and Rice.

Sambar recipe is basically very easy recipe, but there are various methods available. Sambar is made differently as per every region's style. It may have different taste as they uses masala in it.

 

Masala is the important ingredient of Sambar recipe. Traditionally it makes with homemade sambar powder. But, Now a days, ready made sambar masala is available in the market. Most of them are of good quality and taste.

I have also used chutney of Tamarind and jaggery (chinch gulachi chatney). Take tamarind and jagaery in a small bowl and add some water in it. Soak it for 15-20 minutes. After 15-20 minutes squeeze tamarind and throw away. Our chutney of Tamarind and jaggery is ready.

Chutney of Tamarind and jaggery will add delicious taste in Sambar.

Ingredients for Sambar recipe | How to make Sambar recipe


Vegetable for Sambar Recipe
 2 Medium size chopped eggplants
 1 Medium size chopped tomato
 1 cut drum sticks
 1 Medium size chopped onion
 100 g big sliced red pumpkin (remove skin)
 2 Medium size chopped potatoes (Remove skin)
Lentils for Sambar
 100 g pigeon pea lentils / arhar dal / Toor dal
 100 g Yellow split gram / Moong Dal
Tadka and other ingredients
 1.50 tbsp Sambar Masala
 1 tbsp red spices
 Mustard, cumin, turmeric, hing
 Chopped coriander, salt
 Curry leaves, methya (Fenugreek seeds),
 Water extract of tamarind and jaggery

Cooking of vegetables

In a pressure cooker, add pigeon pea lentils and yellow split gram along with potatoes, red pumpkin, eggplants, tomatoes, onion and drum sticks. And rinse all this contents under clean water.

Add 300 ml water in cooker. Measurement of water may increase or decrease as per your method of cooking.

Then add little oil, salt, turmeric and hing. And get 3 whistles of cooker. Whistle may depend on your style of cooking, but make sure to not too much cooking.

Our vegetables should not cooked too fine nor too thick. Refer picture.

Making Tadka for Sambar recipe

In a frying pan, take 1.5 tbsp oil and make it hot. Add mustrad in it. Once it get spluttered, add methya (fenugreek seeds), cumin, hing, turmeric and curry leaves. Saute it well.

Add red spices and again mix it well.

Now, pour all cooked vegetables in a tadka and mix it thoroughly.

Pour Chutney of tamarind and jaggery in to sambar along with Sambar masala and some water. Mix sambar in water completely. Add water as you like consistency of sambar. Keep in mind that, if sambar kept for more time, pumpkin will absorb the water. So, add the quantity of water accordingly.

Add chopped coriander and salt as per taste. Mix it well.
Mind the salt we have already added we have added during cooking of vegetables.

Cover it with a lid for a minute to boil sambar fast. After 1 minute remove lid and boil it for a minute.

Delicious Sambar is ready. Serve hot with Idli / Dosa / Uttapam / Rice.
