Schezwan sauce /schezwan chutney is getting famous day by day as it is now easily available in our super market. As you aware this may contents preservatives which is not good for our health. So, it is good idea to make it at home.
Making Schezwan sauce /schezwan chutney at home is now not a big task. With three easy steps you can easily make it at home.
Red chillies are the main ingredient in this chinese schezwan sauce. You can easily control spicyness of sauce by selecting amount of seeds of chillies.
I love this chutney due to spicyness of it. It can be taken with anything.
I typically taste it with Schezwan fried rice, Jeera Rice, Sandwitches, etc.

Ingredients for Chinese Schezwan sauce | Spicy Schezwan Chutney
Main Ingredients 50 g Red dried chillies ½ cup chooped garlic ¼ cup oil 1 tbsp corn flour 1.50 tbsp sugarOther Ingredients 1.50 tbsp chopped garlic 2.50 g balck pepper powder 5 g citric acid ½ tbsp coriander sticks ½ tbsp dark soya sauce salt for taste

Making paste of chillies

Remove stem of all Red Chillies. Cut into two pieces and remove all seeds out of it.
You can remove seeds of all or half quantities of chillies. It depends on how spicy you want your chutney.

Take all chillies in a mixing bowl. and pour hot water in it. Keep it 1.5 hrs for soaking.

Take soaked chillies in a mixer jar. Make a thick paste of it by crushing in a mixer jar
Making Tadka

Take oil in frying pan and make it hot.
Add garlic, ginger, coriander sticks, and mix it well, but don't let change color of garlic
Making Schezwan Sauce

Add thick paste of red chillies and mix it well

Now add sugar, salt and citric acid in it. You can use vinegar instead of citric acid.
Mix it well till 1-2 minutes

Then add 1 cup water in a mixer jar, in which we have made thick paste of red chillies. Rinse it and add that water in frying pan.
Then add Sugar, black pepper powder and again mix it well

Now take corn flour in a small bowl and add some water in it. Mix it.
And add this mixture in our spices. And again mix it well.
Let it cook for 10 min

Switch off gas / induction cooker. Let it cool, then preserve in refrigerator. It can be lasts upto 1 month
