Soft Idli recipe | Idli with rice and dal | How to make soft idli with idli batter is one of the popular South Indian snack. Traditionally idli makes with rice and urad dal batter. But over period of time idli also can me made with Idli Rava, Poha Idli, sabudana Idli, oats idli etc.

The idli is popular due to its round shape, white color, soft and spongy texture and delicious taste. But all these is solely depends on how we make idli batter. Here we will take you complete process of Idli with Rava and urad dal batter with step by step photos.

Rice which I have used here is a called as "Ukadiche tandul" (parboiled rice) means rice which is partially boiled in husk. The three basic steps of parboiling are soaking, steaming and drying. These steps also make rice easier to process by hand, boost its nutritional profile and change its texture. (Source: Wikipedia)

Parboiled rice makes idli more soft and spongy. If you don't get this rice, still you can use any rice available in the market and still our idli makes soft and spongy. The ratio of rice with urad dal (split skinned black lentils) is 2:1

 

The speciality of our Idli recipe is addition of Methya (fenugreek seeds). It increases richness of taste of our idli. You will definitely feel it!

 

Idli normally served with Sambar or chutney.

 1 cup Parboiled Rice
 ½ cup Urad dal (split skinned black lentils)
 ½ tbsp Methya (fenugreek seeds)

How to make soft idli with idli batter


Preparation for Idli recipe

Rinse Rice, urad dal and methya under water. Add some water in each of them till it immersed completely and then soak it for 8-10 hours. (full night). During cold days needs more time to soak.

Making batter for idli.

Remove extra water. Then blend fine each content separately in a mixer grinder. Add water if required. Our mixture should not be very thick or very thin. Now mix all contents in a large bowl. And again soak it for 8-10 minutes.

Our batter will increase in size after fermentation.

Then add salt as per taste and eating soda or "Eno" and mix it well.

Add some water to boil in a idli steamer on high flame.

Grease Idli pot with oil and pour idli batter in it.

Place all Idli pot in a idli steamer. And place cover / lid n a steamer. Keep gas on high flame.

After 10 minutes, remove the lid and insert a knife in a idli. If no batter sticks to knife means Idli cooked well. If it sticks then let it cook some more time.

Remove all idli from idli pot. Enjoy soft and spongy idli with Sambar or chutney.
