Stuffed Spiced Brinjal is very famous Maharashtrian dish. It is normally spicy.
Stuffed Spiced Brinjal usually made during marriage functions and get together and taste best with Jawar Roti (Bhakri)

Main Ingredients
 5 Medium sized brinjal
Spiced sauce for Stuffing brinjal
 1 Chopped Onion
 78 chopped garlic
 Chopped coriander
 ½ cup grinded roasted peanuts
 Mustard, hing, cumins, turmeric, salt, Spices and oil

Preparation

Take a Brinjal and remove its stem. Then remove thorn completely.

Now, cut Brinjal in "Plus" sign and check inside for any damages.

Now put all brinjals in water so that it will not get black.

Making stuffed spices

Take a frying pan. (don't put oil) and add onion.
Roast it for a minute and then add some oil. It will remove water from onion. Then fry onion well till it gets golden color.

Take fried onion in a mixing bowl and then add grinded roasted peanuts, garlic, salt and spices.
And mix it very well.

Now, fill up stuffings gently in brinjal and then press brinjal slightly from outside.
So that stuffing will fit firmly in brinjal.

Take a oil in frying pan. After making hot, add mustard, cumins, hing, salt and turmeric in it.

Now, put all brinjals on it and then add remaining stuffing.

Then, pour water in it sufficient for cooking of brinjal. And let it boil on high flame.
After boiling let cook brinjal for 10 min on a low flame.

After 10 minutes, remove the lid and check brinjal cooked or not by inserting knife in the brinjal.
