Veg Dum Biryani is world famous Indian food recipe because of its delicious taste and awesome flavors. Veg Dum Biryani is loved by everybody, irrespective of diet, age and class. It is the one of the tastiest dish in India. There are various styles of biryani available across the country, but this Hyderabadi Veg Biryani is original and unique due to its special method of cooking.

 

When we talk about "Dum" we should know the process of its cooking. Unlike in other recipes, in dum process, all vegetables and rice are slowly cooked by steam and pressure. All favors and taste of spices absorbs in rice and vegetables. That's why it is less oily and more flavorable. 

 

The process of cooking Restaurant Style Veg Dum Biryani devides in three parts.

1. Cooking of Rice

In this process rice is first to be soaked for 15-20 minutes. Then this rice to be cooked upto 70 to 80% only with addition of some spices like cumin, tamal leaves, cinnamon, etc.

 

2. Cooking of vegetables

Like rice, vegetbales also to be cooked 70 to 80%. With addition of spices, all vegetables to be saute. We add shahi biryani masala and red spices during cooking of vegeables. We can add it as per your taste. Addition of ghee adds richness in the taste. Then we add little water to cook vegetables. We don't need gravy in vegetable, so only small amount of water in enough. And, as already stated, we have to cook veggies partially.

 

3. Dum process

Finally, Rice and vegetables to be assembled alternately in a layer. Close the opening of pan with foil paper or wet cloth or dough with lid. Cook biryani with low heat for 10-12 minutes with steam.

 

Inspite of popular dish, Veg Dum Biryally makes only on special occasion due to cost involved and efforts required to make it. It is very difficult for a person who just started to learn to cook. It required skills of cooking.

Ingredients of Veg Dum Biryani


Rice
 1.50 cups basmati rice
Vegetables
 ½ cup chopped beans
 ½ cup sliced carrot
 1.50 cups thin sliced onion
 ½ cup chopped potatoes (remove skin)
 ½ cup peas
 ½ cup chopped flower
Tadka
 4 Tamal leaves
 2 chilles chopped and cut vertically
 4 big cardamom
 7 cloves
 4 pieces of black cinnamon (Dalchini)
 2 tbsp ghee
 10 g shahi biryani masala
 ½ tbsp red spices
 8 black pepper
 cumin, clove (Lavang)
 shahjire (caraway seeds)
 turmeric, salt
 paste of ginger and garlic
Other ingredients
 ½ cup curd
 milk with saffron
 coriander
 1 l water

 

How to make Veg Dum Biryani


Cooking rice for Veg Dum Biryani

First of all keep rice for soaking in water for 15 to 20 minutes and then remove all water.

Heat some oil in a frying pan. Add cinnmon, tamal leaves, shahjire, cumin, black cardamom, cloves, black pepper. (Add half of the quantity of each ingredients). Then fry for a minute.

Poor 1 ltr water for cooking of rice.

Now, add salt for taste and cover the pan with lid. and let it boil on high flame.

Once water boiled, remove lid and gently add rice in water. Take care of hot water.

Don't cook the rice as we cooks our regular rice. Cook the rice till it cooked 70 to 80%.

After some time, check the rice. When you press the rice grain by finger it should not mash, but it should cut. That means our rice is 70 to 80% cooked.

Now, drain all the water using strainer and keep aside.

Frying onion

Heat adequate oil in a deep frying pan. Pour sliced onion in oil.

Fry the onion till it changes color to golden. Remove fried onion in a plate and keep aside.

Cooking vegetables for Veg Dum Biryani

Heat some oil in a frying pan. Add cloves, cinnamon, tamal leaves, shahjire, cumin, black cardamom, black pepper, chopped chillies. And fry it for a minute.

Then add ginger-garlic paste. And saute it for a while.

Add chopped potatoes and flower and saute it for 2-3 minutes.

Now, pour chopped beans, carrot and peas. And saute for 1 or 2 minutes.

Sprinkle some salt for taste and to cook vegetables faster. Again saute for a minute.

Now, sprinkle with turmeric, shahi biryani masala and red spices on vegetables and mix it well.

Then add curd in vegetables. And again mix it well. Like rice, vegetables also to be cooked around 70 to 80%.

Sprinkle little pure ghee and saute for a while.

Pour around 1/2 glass water with salt for taste. Make sure to add sufficient salt as we will not use salt again.

Cover it with lid for a minute. After a minute remove lid and OFF the gas.

In a deep pan, add a layer of cooked vegetables. Use half of the quantity.

Then sprinkle some fried onion.

Now, add layer of cooked rice. Use half of the quantity of rice.

Cover the pan with foil paper and press with lid on it. Our motto is not to pass steam outside. You can also use wet cloth or wheat flour dough and then cover with lid.

Now, keep the pan for a minute on high flame and then cook it for 10 minutes on low flame.

Remove lid and foil paper after cooking it for 10 minutes.
